Tasting Notes

Deep crimson colour with brick red mousse and a fine bead. The aroma displays ripe plums, earthy notes and spice. Mouth-filling flavours of plums and prunes with hints of liquorice. Soft and creamy with a persistent cherry, chocolate and spice finish. Enjoy chilled with or without food. This Sparkling Shiraz can be a meal on its own or will go well with eggs and bacon for breakfast.

Our grapes are machine harvested early in the vintage to ensure fruit intensity is paramount. We crushed, chilled and fermented the juice at controlled temperatures in the cool cellar. Our Shiraz is aged in old French oak barrels allowing wonderful smooth integration of fruit and a rich weighty texture across the palate. The wine was bottled under pressure to ensure the bubbles last all those long summer nights and we use a screw cap closure which ensures the longevity once opened.

Niche Merlot 2022

Tasting Notes

Vibrant crimson with red hue. Aromas of freshly crush black fruit, chocolate and a mild touch of oak and spice. The palate is round and generous. A succulent mid palate shows lovely plum and some cherry flavours with chocolate creating a rounder finish whilst being perfectly interwoven between natural fruit acid and tannin. Some spice ensures a fresh and lively finish.

Winemaking

The fruit was sourced from premium vineyards located in South Australia. We picked in the cool of night when the fruit had reached its optimum ripeness then fermented on skins in static potters and rotary fermenters for a period of seven days to retain as much of the luscious natural fruit flavour as possible. Warm temperatures at the early stages of fermentation along with ta short period of post ferment maceration helped develop soft fleshy fruit and tannins while helping build structure. Following the pressing process, clarification and final blending the fruit was matured with select parcels having contact with old French oak.

Niche Clare Valley Riesling 2017

Tasting Notes

Pale straw with light green hues. Quite lifted aromatics featuring lime and citrus blossom. The palate showcases what we think Clare Valley is all about displaying excellent fruit definition. This is a classic Clare Valley Riesling from one of the best vintages we have seen in recent history. It displays flavours of lime and citrus peel and some notes of talc powder with wonderful depth, good acid backbone and length derived from high quality intense fruit.

Winemaking

The fruit for this wine was sourced from the Clare Valley, Australia’s premier growing region for Riesling production. The 2017 vintage will become one of the best in recent times in our opinion. The fruit was machine picked at various stages in the cooler hours of the morning. After crushing, the free run juice was isolated and underwent a slow, cool fermentation before being blended and filtered for bottling.
